Gluten-Free Panini

Panini Press + Udi’s Gluten-Free Bread + Applegate Farms Deli = JOY

As an active gluten-free family, we’re always looking for quick, easy, yummy lunches. Our latest favorite trend: GF Paninis! Simply stuff a few slices of Udi’s with gluten-free lunch meats (Applegate Farms has a whole line of delectable gluten-free, Casein-free, pre-sliced meats — and cheeses for those who can tolerate dairy),

My current favorite is a Pepperoni Panini. Grill the pepperoni for a few minutes on the panini press, then stick them on a slice of Udi’s GF bread along with any other toppings (like shredded mozzarella cheese or veggies). Then brush bread with a nutty oil like Hazelnut or Almond (which is great for me because I can’t have dairy or egg, and great for the boys ’cause it’s a healthy oil). Close the lid and heat until golden brown. In 5 minutes you have a hot, super tasty little calzone-like little pocket of Italian yumminess.

The boys are always trying to one-up each other with different combos of meats and cheeses…. What’s your favorite sandwich or panini?
