Gluten Free Pigs in Blankets

A few days ago we went to a dear friend’s house for a super-swanky New Year’s party. Her father owns a FABULOUS four-star italian restaurant (or is it five stars…? I can never remember which is the best). So the food was to die for. Well, that’s what I was told anyway. My husband was in heaven Lobster Ravioli… 12 different kinds of cheese… carving stations with ham and roast beef….

I brought my own gluten-free food: there were over one hundred people, so there was no way I was trusting anything to be contamination free. Sad.

But since most of the fare was rather high end, our Little Man wasn’t as thrilled with the offerings. Although he loved the lobster raviloi when he thought it was mac-n-cheese. Then he heard that it had LOBSTER in it and immediately spit it out. Even though he’d had three already!

So imagine the delight a 6-year-old had when he saw a kid favorite being carried around on silver platters: Pigs in the Blanket. Granted, they were a light, flakey puff pastry version (that I doubt came from a package!), so they were unlike any that we may have had before. But I don’t think he remembered having them anyway(it’d been years). He was actually apprehensive at first (he’d seen “shrimp and those GREEN things on those silver trays. Ick!”). But once we convinced him that yes, it really is a hot dog wrapped in a special bun, he took a bite. His eyes rolled back in his head as he muttered “Oh… man…!” and reached for a handful more.

Well, he must’ve put away a couple of dozen of those little piggies over the course of the evening. They had to whip up batch after batch for the under-four-foot crowd. In fact, they were so good that on the way home he sleepily asked… “Can we have some of those Pig Blankets for dinner tomorrow too…?”

So two days, a trip to Whole Foods and lots of online searching later, I had the supplies but could not find a gluten & dairy free recipe for Pigs in a Blanket. So here’s the recipe we came up with. It’s our first attempt, so while it’s not the best (they’re a little dry for my taste), they’re not bad. The Little Man said they were Awesome! Better even!” than the ones he had at the party.

I think he was just trying to butter me up so I’ll make ’em for dinner tomorrow too. Oh yeah.. he already lobbied for it. 😛

Gluten Free Pigs In Blankets

• 1.5 cups Gluten-Free Bisquick
• 1/4 cup Shortening
— Dairy Free Substitute: Earths Balance Buttery Spread (COLD right from fridge)
• 1/4 cup Milk
— Dairy Free Substitute: Almond Milk
• 3 eggs, separated
• Wellshire Farms Uncured Beef Cocktail Franks (these are gluten and diary free.. you can use any kind of GF hot dogs you like)

Cut together Bisquick and Spread with a fork until spread is little pea-sized pieces

Gluten-free Pigs in a Blanket bottoms came out nice a golden brown

Add Almond Milk and Egg Yolks

The kids love this part: Scoop out ball of dough and form blankets (1-inch wide but 2 inches long)

Wrap the pigs in their wee blankets

Brush with Egg Whites

Bake for 15 minutes in 400 degree oven until bottoms are golden brown (see picture to right)

Anyway. That’s our recipe. (We actually didn’t brush the egg whites onto the blankets before cooking… I came up with that idea after looking at these pics…) The Little Man and I made them together and had a whole lot of fun doing it! Let me know if you come up with any modifications that make ’em better.

    I tried the recipe using 1 egg and 1/2c applesauce in place of the other 2 eggs. This made the dough very sticky and I had to add a lot more flour to make it manageable. While the dough was very light, it crumbled upon eating. I’m sure the eggs were needed for better binding. Next time, I’ll try 2 egg yolks and about 1/4c applesauce (maybe less).

    Use applesauce in place of egg might put more moister in the dough. That would also make the recipe egg free.
